Hi Cheshirepaul welcome to the forum.
Firstly if you have never been here in winter you will find it very different because obviously many shops, bars and restaurants are closed, but there are still enough open so that you won't go hungry or thirsty and you will always find someone to chat to. There are no hotels open so you would have to do SC or the Hostal Paris if that is open, it is under new management and i am not sure if it will be, but will try to find out.
I would think that you will enjoy cycling as the roads are quiet.

Hello Cheshirepaul, To be honest the atmosphere is not like the summer, very quiet
& sleepy. I suggest going to Eygpt for winter sun or going on a cruise where there
is lots to keep you busy.Save PP for Spring, Summer and Autumn as tried Xmas a
few years ago and then there was more places open.Hope this helps...
